Ingredients (Makes about 2 wraps)

For the Zucchini Wraps:

  • 1 large Zucchini
  • ½ Carrot
  • 1 handful fresh Basil
  • 1 egg
  • ¼ cup grated Parmesan cheese
  • Salt & Pepper to taste

For the Grilled Shrimp:

  • Shrimp (as many as you like)
  • Salt & Pepper to taste
  • Garlic powder

For the Sandwich Fillings:

  • Lettuce
  • Fresh Parsley, Cilantro & Dill
  • Avocado
  • Tomatoes
  • Grilled Shrimp

Step-by-Step Instructions

  1. Prepare the Zucchini Wrap Batter: Grate the zucchini and carrot. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess water as possible. In a bowl, mix the grated zucchini, carrot, chopped basil, egg, grated Parmesan cheese, salt, and pepper until well combined.
  2. Bake the Wraps: Spoon the mixture into the Baking pan lined with parchment paper and spread into thin circles. Bake in Preheated Oven at 400F for 20 minutes or until golden brown. Wait around 5 minutes to cool it down and transfer from the parchment paper into a serving plate.
  3. Grill the Shrimp: Season the shrimp with salt, pepper, and garlic powder and olive oil. Grill or pan-sear in a hot pan for 2–3 minutes per side until pink and cooked through.
  4. Assemble the Wraps: Place lettuce on each zucchini wrap. Add sliced avocado, tomatoes, fresh herbs (parsley, cilantro, dill), and grilled shrimp. Enjoy it open face or Roll or fold the wrap gently.
  5. Serve: Enjoy immediately while the shrimp is warm and the wrap is fresh. Garnish with extra herbs if desired.

Serving Suggestions Serve with a side salad or extra grilled vegetables. For a heartier meal, add more shrimp or a boiled egg on the side.

Be Creative: Swap the Parmesan Cheese with your favorite cheese. Mozzarella Cheese is the best for holding the wrap together. Cheddar cheese is great as well. Parmesan Cheese is not as good for holding the wrap shape but we love it because it’s low in lactose and it never irritate our stomach.

Storage Tip: The zucchini wraps are best eaten fresh. You can store the cooked wraps in the refrigerator for up to 2 days. Reheat gently in a pan. Grilled shrimp is best enjoyed the same day.

These Fresh Garden Zucchini Wraps with Grilled Shrimp are a beautiful celebration of homegrown ingredients. Light, vibrant, and full of flavor — they’re sure to become a favorite in your kitchen!
