  • Prepare the Zucchini Wrap Batter: Grate the zucchini and carrot. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess water as possible. In a bowl, mix the grated zucchini, carrot, chopped basil, egg, grated Parmesan cheese, salt, and pepper until well combined.
  • Cook the Wraps: Heat a non-stick pan over medium heat. Spoon the mixture into the pan and spread into thin circles. Cook for 3–4 minutes on each side until golden and firm. Set aside and keep warm.
  • Grill the Shrimp: Season the shrimp with salt, pepper, and garlic powder. Grill or pan-sear in a hot pan with a little oil for 2–3 minutes per side until pink and cooked through.
  • Assemble the Wraps: Place lettuce on each zucchini wrap. Add sliced avocado, tomatoes, fresh herbs (parsley, cilantro, dill), and grilled shrimp. Roll or fold the wrap gently.
