  • ¼ cup red cabbage finely sliced
  • 1.5 cups parsley finely chopped
  • 2 radishes roughly chopped
  • 2 stalks green onions finely chopped
  • 2-3 tomatoes finely chopped
  • 0.5-1 Jalapeno pepper remove seeds and finely chopped optional
  • Beet and Olives for Garnish

  • 1 teaspoon salt
  • 1 teaspoon citric acid substitute with more lemon juice, but it will make the salad soggy
  • ¼ cup lemon juice
  • ¼ teaspoon Cayenne pepper or as much as you like
  • ¼ cup olive oil
  • 1 tablespoon dry or fresh mint finely chopped

  • Prep the Salad Base: Clean and prep all your vegetables. Using a sharp chef's knife or a mandoline, slice both the green and red cabbages as thinly as possible. Place them into a very large mixing bowl. Add the finely chopped parsley, roughly chopped radishes, sliced green onions, and chopped tomatoes. If you like a subtle heat, fold in the finely chopped jalapeño.
  • Whisk the Dressing: In a separate medium glass bowl or mason jar, combine the salt, citric acid, fresh lemon juice, cayenne pepper, and finely chopped mint. Pour in the olive oil and whisk vigorously (or secure the jar lid and shake thoroughly) until the dressing ingredients are completely emulsified.
  • Dress the Salad: Pour Freddie's lemon-mint dressing evenly over the shredded cabbage mixture.
  • Toss and Marinate: Using large salad servers, toss the salad thoroughly to ensure every ribbon of cabbage is coated in the dressing. Let the salad rest for 5 to 10 minutes; the acids will lightly soften the cabbage structure just enough to absorb the flavors while locking in that signature, rigid crunch.
