High Protein Crispy Breakfast Crepe

Start your morning with something that feels indulgent but still fuels your day the right way. These High Protein Crispy Breakfast Crepes are thin, golden, and wonderfully crunchy, with a light texture that holds up beautifully to both sweet and simple fillings. Unlike regular crepes that can feel heavy or soft, this version stays crisp even after folding, making every bite satisfying.
What makes these crepes special is the addition of EarthChimp Chocolate Protein Powder. We chose this brand because the ingredients are clean and natural, with no artificial aftertaste. When we tested it by mixing a quarter cup of the powder with about 300 ml of cold water, the flavor was surprisingly pleasant — almost like a blend of dried fruits and mild vegetables rather than the chalky or overly sweet taste some protein powders leave behind. Because our family is not fond of drinking shakes or smoothies every day, we prefer finding ways to cook with protein powder instead. These crepes turned out to be one of our favorite solutions.
The batter is simple and comes together quickly. You only need a few pantry staples: rice flour and cornstarch for that signature crispiness, a little baking powder for lightness, salt for balance, one egg, milk (dairy or non-dairy), and optional vanilla extract. The EarthChimp Chocolate Protein Powder adds both flavor and a solid protein boost without weighing the crepes down. The result is a thin, pourable batter that spreads easily in the pan and cooks into delicate, golden sheets with crispy edges.
One of the best parts of this recipe is how flexible it is. For a fully vegan version, simply leave out the egg and use non-dairy milk. The crepes still turn out thin and crispy. You can also prepare the batter the night before and keep it covered in the refrigerator. In the morning, just give it a quick stir, heat the pan, and breakfast is ready in minutes — perfect for busy weekdays.
These High Protein Crispy Breakfast Crepes are more than just a tasty meal. They are a practical way to increase your daily protein intake without relying on shakes. The combination of rice flour and cornstarch creates a light, shatteringly crisp texture, while the chocolate protein powder adds subtle richness and nutrition. Whether you serve them for breakfast, a weekend brunch, or even a light dessert, they deliver both satisfaction and convenience.
