We’ve created a “dual-flavor” experience: the Soy Sauce Sesame for those who love a salty, nutty umami kick, and the Italian Parmesan for a crispy, herbal comfort-food feel. - The “Salt and Sweat” Step: This is the most important part! Sprinkle your eggplant batons with a little salt and let them sit for 10 minutes before breading. Use a paper towel to pat away the “beads” of moisture. This removes the bitterness and ensures the fries stay crispy instead of steaming in the oven.

- 4 Tablespoons Sesame seeds
- 1/4 cup Parmesan Cheese
- Black Pepper
- Olive Oil
- Italian Parmesan Flavor Ingredients:
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 1 Tablespoon Paprika
- 1/4 cup Parmesan Cheese
- Salt And Black Pepper
- Olive Oil
- Bread Crumbs
- 2 Beaten Eggs
- Homemade Yogurt Sauce Ingredients:
- 6 Tablespoons Homemade Yogurt
- A pinch of Salt
- 0.5 Teaspoon Lemon Juice
- 2 Tablespoons Chopped cucumber
- 2 Tablespoons Chopped Parsley
- 0.5 Teaspoon Mint dry or fresh, optional
- Homemade Marinara Sauce Ingredients:
- 6 Tablespoons Crushed Tomatoes
- A pinch of Salt
- 0.5 Teaspoon Sugar
- Drizzle of Olive Oil
- 0.5 Teaspoon Italian Seasoning
- Basil optional
Instructions
- Cut into strips and put them in salt water. Dry them out very well
- Divide it into two bowls. We will make two flavors of eggplants today.
- For the bowl of Soy Sauce & Sesame Flavor
- Drizzle Olive Oil , 1 Tablespoon Garlic Powder , 1 Tablespoon Onion Powder, 1 Tablespoon Paprika, 1 Tablespoon Soy Sauce, 4 Tablespoons Sesame Seeds, Black Pepper, 1/4 Cup Parmesan Cheese. Mix Well
- Place them in a single layer on the parchment paper on a baking sheet.
- Bake @ 400F (200C) for 20 minutes
- For the bowl of Italian Flavor
- Drizzle Olive Oil, A pinch of Salt, Black Pepper, Italian Seasoning, 1 Tablespoon Garlic Powder, 1 Tablespoon Onion Powder 1 Tablespoon Paprika, 1/4 Cup Parmesan Cheese. Mix Well. Add two beaten eggs, Bread Crumbs. Mix well.
- Place them in a single layer on the parchment paper on a baking sheet.
- Bake @ 400F (200C) for 20 minutes
- After 20 minutes, they are both done!
- Making Yogurt sauce by combining all ingredients into a bowl and mix well, put in the fridge until it is ready to use.
- Making the Marinara sauce by combining all ingredients and mix well. Microwave for 1 minute to marinate all the flavor and the sauce is ready to serve.
